For Puris (Crispy Shells):

- Store-bought puris (available at Indian grocery stores) or you can make your own using semolina or all-purpose flour

Instructions:


1. Prepare the Pani (Spiced Water):

   - In a blender or food processor, combine fresh mint leaves, cilantro leaves, green chilies, ginger, lemon juice, roasted cumin powder, chaat masala, black salt, and regular salt.

   - Add cold water and blend until you get a smooth mixture. Adjust the consistency by adding more water if needed. Transfer the mixture to a large bowl and refrigerate it for at least 30 minutes to chill.

2. Prepare the Filling:

   - In a bowl, mix together cooked chickpeas, mashed potatoes, chopped onion, tamarind chutney, and salt. You can also add optional ingredients like sprouts, boiled moong dal, or boiled black chana for additional texture and flavor.

3. Assemble the Pani Puri:
