Homemade Masala Dosa Recipe: A Flavorful South Indian Delight

Ingredients

For Dosa Batter:

- 2 cups raw rice

- 1 cup urad dal (black gram lentils)

- 1/2 teaspoon fenugreek seeds (methi seeds)

- Salt to taste

- Water for soaking and grinding


For Potato Filling (Masala):

- 3-4 medium-sized potatoes, boiled, peeled, and mashed

- 1 tablespoon oil

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon split black gram (urad dal)

- 1/2 teaspoon split Bengal gram (chana dal)

- 2-3 green chilies, finely chopped (adjust to taste)

- 1 inch ginger, grated

- 1 sprig curry leaves

- 1/2 teaspoon turmeric powder

- Salt to taste

- Fresh coriander leaves, chopped (optional)

- Lemon juice (optional)


For Assembling:

- Dosa batter

- Potato filling (Masala)

- Oil or ghee for cooking dosas


Instructions:


1. Prepare Dosa Batter:

   - Wash the rice and urad dal separately and soak them along with fenugreek seeds in water for 6-8 hours or overnight.

   - After soaking, drain the water from rice and dal. Grind them separately with enough water to make a smooth batter. The consistency of the batter should be like pancake batter.

   - Mix both rice and dal batter together, add salt, and mix well. Allow the batter to ferment in a warm place for 8-12 hours or overnight until it doubles in volume.


2. Prepare Potato Filling (Masala):

   - Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.

   - Add cumin seeds, split black gram, and split Bengal gram. Sauté until they turn golden brown.

   - Add chopped green chilies, grated ginger, and curry leaves. Sauté for a minute.

   - Add turmeric powder and mix well.

   - Add mashed potatoes and salt. Mix everything together until well combined.

   - Optionally, add chopped coriander leaves and a squeeze of lemon juice for extra flavor. Mix well and remove from heat.


3. Make Masala Dosas:

   - Heat a non-stick dosa tawa or skillet over medium-high heat. Once hot, grease it lightly with oil or ghee.

   - Pour a ladleful of dosa batter onto the center of the tawa and spread it thinly in a circular motion to make a large dosa.

   - Drizzle a little oil or ghee around the edges of the dosa and on top.

   - Once the edges start to lift and turn golden brown, spread a spoonful of potato filling (masala) on one half of the dosa.

   - Gently fold the dosa over the filling to form a semi-circle or roll it up like a cylinder.

   - Cook for a minute or two until the dosa turns crisp and golden brown. Flip it over and cook the other side if necessary.

   - Remove the dosa from the tawa and serve hot with coconut chutney, sambar, or any chutney of your choice.
