Here's a recipe for Vada Pav, a popular street food snack from Maharashtra, India:

Ingredients for Vada (Potato Filling):


For Potato Filling:

- 4 medium-sized potatoes, boiled, peeled, and mashed

- 1 tablespoon oil

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1-2 green chilies, finely chopped (adjust to taste)

- 1 tablespoon ginger-garlic paste

- 8-10 curry leaves

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- Salt to taste

- 2 tablespoons chopped cilantro (coriander leaves)


For Batter:

- 1 cup chickpea flour (besan)

- A pinch of baking soda

- Salt to taste

- Water as needed


For Assembling:

- Pav (soft bread rolls)

- Green chutney (made with coriander leaves, mint leaves, green chilies, ginger, and lemon juice)

- Tamarind chutney

- Garlic chutney (optional)

- Thinly sliced onions

- Thinly sliced green chilies (optional)

- Butter for toasting pav

Instructions:

1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add chopped green chilies, ginger-garlic paste, and curry leaves. Sauté for a minute.

2. Add turmeric powder, red chili powder, and salt. Mix well.

3. Add the mashed potatoes and chopped cilantro. Mix until well combined. Cook for 2-3 minutes, stirring occasionally. Remove from heat and let the mixture cool down.

4. Meanwhile, prepare the batter for coating the potato balls. In a bowl, mix chickpea flour, a pinch of baking soda, and salt. Gradually add water and whisk until you get a smooth, thick batter. The batter should be thick enough to coat the potato balls.

5. Take a small portion of the potato mixture and shape it into a ball or a patty.

6. Heat oil for deep frying in a pan over medium heat. Once the oil is hot, dip each potato ball into the batter, ensuring it's evenly coated, and carefully slide it into the hot oil.

7. Fry the coated potato balls until they turn golden brown and crisp. Remove them from the oil and place them on a plate lined with paper towels to drain excess oil.

8. Slice the pav horizontally without cutting it all the way through. Spread green chutney, tamarind chutney, and garlic chutney (if using) on the inner sides of the pav.

9. Place a hot vada (potato ball) inside the pav. Optionally, add some sliced onions and green chilies on top of the vada.

10. Close the pav and press it gently. Repeat the same process for the remaining vadas and pav.

11. Heat a pan or griddle and toast the assembled vada pavs with a little butter until they are crispy and golden brown on both sides.

12. Serve hot with additional chutneys on the side.
