 Make Aloo Gobi at home!!!!




Ingredients:

- 2 cups cauliflower florets
- 2 medium-sized potatoes, peeled and cubed
- 2 tablespoons cooking oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 tomatoes, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish

Instructions:

1. Prepare the Vegetables:
   - Cut the cauliflower into medium-sized florets.
   - Peel and cube the potatoes. Place them in a bowl of water to prevent discoloration.

2. Parboil the Vegetables:
   - Boil water in a large pot. Add the cauliflower florets and potato cubes.
   - Parboil them for about 3-4 minutes until they are slightly tender but not fully cooked. Drain and set aside.

3. Sauté the Vegetables:
   - Heat oil in a large pan or skillet over medium heat.
   - Add cumin seeds and let them sizzle.
   - Add the finely chopped onion and sauté until it turns golden brown.

4. Add Spices:
   - Stir in the ginger-garlic paste and sauté for a couple of minutes until the raw aroma disappears.
   - Add the chopped tomatoes and cook until they become soft and the oil starts to separate.

5. Season and Spice:
   - Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well and cook for a few more minutes.

6. Combine with Parboiled Vegetables:
   - Add the parboiled cauliflower florets and potato cubes to the pan. Stir them to coat with the spice mixture.

7. Cook and Simmer:
   - Cover the pan and let the vegetables cook on low to medium heat. Stir occasionally to prevent sticking.
   - Cook until the potatoes and cauliflower are tender. It may take about 15-20 minutes.

8. Sprinkle Garam Masala:
   - Once the vegetables are cooked, sprinkle garam masala and give it a final stir.

9. Garnish and Serve:
   - Garnish with fresh coriander leaves.
   - Serve Aloo Gobi hot with roti, naan, or steamed rice.
